Healthy Coconut Flour Pancakes

Nothing satisfies you in the morning like a plate of freshly baked pancakes with a cup of joe. However, it is probably not the healthiest breakfast choice, is it? I've got you. With this delicious recipe (vegetarian / paleo/ keto - friendly) you can enjoy pancakes why keeping your diet.

What would you need:
1 cup of almond milk
2 eggs
4 tbsp of coconut flour
baking powder
agave syrup (or alternative sweetener of your choice)
1 tbsp coconut oil
Whisk eggs in a large bowl. Make sure their start slightly foaming before you add any other ingredients.
Proceed with almond milk. You can also use any other plant-based milk of your choice, I just love almond milk taste and creaminess. Slowly whisk milk into the eggs.
Gradually add coconut flour. Keep in mind that coconut flour is very absorbent, so you don't want to overdo it.
Add baking powder (just a sprinkle) along with agave syrup and a tablespoon of coconut oil for a sweeter taste. Keep whisking the mixture until even gooey texture is achieved.
Preheat your pan. Add a spoon of mixture and distribute mixture evenly to from a shape of a pancake.
Brown a pancake 1-2 min on each side at a below medium fire.
Enjoy your healthy pancakes with maple syrup or any other way. :)
