Keto/Paleo Friendly Healthy Chocolate Hazelnut Spread

As a part of my gut healing diet I have to avoid sugar and processed foods. However, I have occasional chocolate cravings, so the desire to try homemade healthy version of Nutella came naturally.




Ingredients

3 cups of roasted hazelnuts

1 tbsp of coconut oil (or any other oil)

1,2 cups of organic cocoa powder

sweetener according to taste


1. Add roasted hazelnuts mixed with oil, starting from the oil. You want to make sure that blades are covered with oil for better blending.

2. Make a hazelnut butter by gradually crushing nuts in blender. Do so until you reach a desired fluffy texture.

3. Add cocoa powder slowly while still having blender on at a lower speed. Add sweetener of your preference. I used two pumps of Monin Dark Chocolate Sauce.

4. Blend the spread for 1-2 minutes until desired texture is achieved. It should be a little liquid.

5. Pour spread into the jar and refrigerate for a couple of hours.



My spread turned out very dark and chocolaty. Imagine eating 90% dark chocolate. If you don't like that, you can add almond/cashew milk for a creamier taste as well as more sweetener.
